Tom is as passionate about the taste of the food as he is about the way that it is presented. Each year we are amazed at how innovative and exciting his dishes look and taste.

Tom tells us a bit about the menus that he creates for us each year.
“In creating the new menus for Dundas Castle this year, the team and I have had the opportunity to really push the boundaries of what we can do, and we believe that the dishes we now offer are a fantastic dining experience that can be achieved when you combine the natural produce of Scotland, carefully prepared by a team of dedicated craftsmen, and the elegance and heritage of one of Scotland’s most exclusive venues.
Our inspiration for the dishes we have produced comes from both the variety and quality of Scotland’s larder and the history, heritage and opulence of the castle. Each dish has been born from the ethos of our cuisine; simple, natural, beautiful.”
